If user decides to change any data on "My Profile" page - admins immediately receive email notification about it, so you can always track users activity.
You can specify who should receive such notifications - only "Super Users" or maybe some other group like "Administrators" or "Managers".
You can even setup separate email notification for users who made these changes, so after they do profile update they receive email about it.

Yes, you can create separate email template and write there any texts and user fields with values.
- How can I add user fields in email notification template ?
In email template editor you can see buttons like "+ Name", "+ Username", etc... please use them to add variables into email template.
